Step 1 - Preheat and Prepare Pans
Preheat the oven to 335°F. Grease each of the three 8-inch pans, line with a parchment circle, then flour the sides (use GF flour for coating). Set aside.
Step 2 - Combine Dry Ingredients
In a large bowl, stir together the GF all-purpose flour, oat flour, baking powder, baking soda, and salt until evenly combined. Whisk thoroughly to distribute the leavening agents completely clumped baking soda or baking powder creates dense spots in the finished cake.
Step 3 - Cream Butter, Sugar, and Vanilla
In your stand mixer bowl, cream the softened vegan butter on medium-high speed until light and fluffy. Add the cane sugar and 3 tablespoons of vanilla extract and mix until well incorporated approximately 3 minutes. The mixture should look pale and slightly fluffy.
Step 4 - Add Flour and Applesauce in Alternating Stages
This stage uses a specific alternating addition technique:
Add one quarter of the flour mixture and mix until well incorporated
Add another quarter of the flour and mix
Add the 1 cup of applesauce and mix until well combined
Add the remaining flour in two batches, mixing between each
This alternating approach prevents the batter from becoming too wet or too dry at any stage and ensures the applesauce incorporates smoothly rather than sitting as a separate wet pocket in the batter.
Step 5 - Add Lemon Juice and Creamer (Work Quickly Now)
Add the 1½ tablespoons of lemon juice and 1½ cups of room temperature vegan creamer to the batter. Mix just until the batter comes together. Do not overmix at this stage.
From this point, work with purpose. The lemon juice and baking soda reaction has begun. Get the sprinkles folded in and the batter into the pans quickly.
Step 6 - Fold in Sprinkles
Remove the bowl from the mixer. Use a silicone spatula to gently fold the ¾ cup of vegan rainbow sprinkles into the batter. Fold rather than stir this preserves sprinkle structure and minimizes color bleeding into the surrounding batter.
Minimize folding, 8–10 gentle folds to distribute the sprinkles evenly. Stop as soon as they're distributed. More folding = more color bleeding and slightly tougher texture from overworked GF batter.
Step 7 - Divide and Bake Immediately
Divide the batter evenly among the three prepared 8-inch pans. Work quickly you want all three pans in the oven within 5–10 minutes of adding the lemon juice. The lemon-baking soda reaction should happen in the oven, not on the counter.
Bake at 335°F for 35–40 minutes, rotating each pan once at the halfway point (approximately 17–18 minutes). The cake is done when a toothpick inserted into the center comes out clean.
Step 8 - Cool Genuinely, Completely
Remove from the oven and allow to cool in the pans for 15 minutes. Turn out onto wire racks and cool completely at least 1 hour, preferably 1.5–2 hours. GF cake layers are more fragile than wheat-flour layers when warm. Attempting to frost or handle them before they're completely cool produces crumbling and layer shifting.
If you're in a time crunch, refrigerate the layers for 30–45 minutes after they reach room temperature to speed the process.
Step 9 - Make the Vanilla Buttercream
Add the softened vegan butter and vegan cream cheese to your stand mixer. Cream on medium-high until light and smooth approximately 2–3 minutes.
Sift the powdered sugar before adding. Adding unsifted powdered sugar produces gritty, slightly lumpy frosting that doesn't smooth out fully regardless of how long you beat it. The sifting takes 2 minutes and makes the frosting significantly smoother.
Add the sifted powdered sugar gradually ½ cup at a time mixing on low after each addition until incorporated. Increase to medium speed and beat for several minutes until light and fluffy. Add 2 teaspoons of vanilla and the optional 2 tablespoons of almond milk if the frosting is too stiff to spread easily.
Step 10 - Assemble
Apply a crumb coat (thin frosting layer across all surfaces), refrigerate 20 minutes, then apply the final frosting layer. Decorate with additional sprinkles on the exterior for the full funfetti visual impact.
